*Makes 4 Stuffed Potatoes*
For the potatoes:
• 4 sweet potatoes, medium size. Slit a line in the middle, and poke the sides with a fork.
• Vegetable broth, splashes for baking
• Wrap the potatoes in tin foil. Bake at 425 F for 15 mins
• Open the wrap slightly, and splash some broth, flipping, splashing some more. Cover them back up.
• Bake at 400 F for 30 mins, flipping every 10 (adding broth if too dry).
• Potatoes should be ready when fork tender on the sides (right in the centre of each).
For the Filling:
• 1 red pepper, small dice
• 1/2 can black beans, rinsed & drained
• 1/2 can corn, drained
• Veggie broth for cooking (1/2 cup to 1 cup)
• Favourite spices. I chose: cardamom, smoke
