Arroz con Pollo.....08 presas de pollo  01 cebolla grande picada en cuadritos  05 tazas de arroz  01 botella de cerveza negra  1/2 kg. de arvejitas peladas  1 pimiento cortado en tiritas muy finas  01 ají escabeche entero  01 cucharada de ají mirasol  01 cucharada de ají panca  1 1/2 tazas de hojas de culantro molido  1 1/2. cdas. ajos  Sal al gusto  Aceite c/n.  02 cubitos de verduras

I would say the cumin, corn, and beer are optional. “Aji Amarillo” might be the hardest thing to get and there is really no substitute for it (you might be able to find it in a latin market). To the way I do it, the differences are: I do not use black pepper; I usually use a rice maker and instead of water I use the stuff from steps 3 – 5; Last, something to put as a compliment to serve with would be avocado slices and/or sweet potatoes. All and all is really easy!
