Protect Your Fingers... When using a mandoline to slice foods that are too small to fit into the safety hand guard — such as fingerling potatoes — put metal thimbles on your fingers to keep them out of harm’s way and to firmly grip the food.
Pepper Cleaner. To hollow out bell peppers without damaging them — especially ideal for stuffing — use a melon baller to scrape the seeds and veins from the inside of bell peppers. This way, you lose less flesh than if you trim them with a knife.
Cleaning Up Cauliflower: If left in the refrigerator for too long, cauliflower can start to develop brown spots on the outside — but that doesn’t mean the whole head is a lost cause.
