Spice up taco night with zesty ground chicken seasoned with coriander and cumin. The low-fat meat joins hearty chunks of potato, green olives, and dried plums in corn tortillas for a fantastic twist of spicy and sweet.
This was delicious BUT it needs more spice. I added garlic (two crushed cloves), sauteed a whole onion instead of using raw green onions, one T. toasted cumin, and 1T spicy roasted chili powder. Kept tasting until it felt somewhere between a thick salsa and traditional chili. Added shredded chicken breast and kept it on "warm" in the slow cooker for about 5 hours and it was GOOD!!! No leftovers.
