Roasted garlic: Cut off and discard the top third of the head of garlic to expose the cloves. Place garlic on aluminum foil and top with about 2 TBS of olive oil, salt, and pepper. Fold the foil into a sealed packet. Place the packet on a baking sheet and roast in a 325 degree F oven until tender; this should take about 45 mins to an hour. Let cool slightly, then squeeze. The soft, tender cloves should pop right out. Use right away, or store in the refrigerator up to 3 days.
