Sour cream chicken enchiladas--These tasty enchilladas are so easy! Don't have a lot of time? I sub'd the tomatillos with green tomatillo salsa. Doing this let me skip the blender step too. Also, instead of putting the corn tortillas in oil (although that's yummy), wrap them in a dish cloth and put them in the microwave for 1-2 minutes. Fill while hot! Enjoy!
