Stuffed Poblano Peppers
Want a great alternative to the regular old stuffed green pepper? Here is a great way to mix things up. Stuff the poblano with chorizo and cauliflower “rice” add some veggies, top with salsa and you have yourself a Mexican inspired stuffed pepper! Ole!
Combined 1:1 parts of ghee and chopped fresh herbs (I used sage and thyme) with 1 tsp sea salt and 1/2 tsp pepper. Rubbed it under the skin of this amazing pastured chicken, then stuffed the inside with some fresh chives. Roasted it in a 425F oven for 20 min, then reduced the heat to 325F and went another 45 min or so. So good!
