#paleo Baked Chicken Strips with Honey Mustard Sauce: 1 pound chicken tenders; 1/4 cup extra virgin olive oil; 1 cup dried shredded coconut, unsweetened; 1/2 cup coconut flour; 1/2 teaspoon course salt; 1/8 teaspoon pepper; 1/4 teaspoon garlic salt; 1/4 teaspoon ground mustard seed; 1/4 teaspoon onion powder; 2 teaspoons whole grain mustard; 4 teaspoons honey

Combined 1:1 parts of ghee and chopped fresh herbs (I used sage and thyme) with 1 tsp sea salt and 1/2 tsp pepper. Rubbed it under the skin of this amazing pastured chicken, then stuffed the inside with some fresh chives. Roasted it in a 425F oven for 20 min, then reduced the heat to 325F and went another 45 min or so. So good!
