Julia Child's spinach souffle recipe was one of the most fun reicpes to make from her book, Mastering the Art of French Cooking. This souffle is packed full of delicious and healthy spinach and eggs. It's then topped with Swiss cheese and baked until puffy. Even though my souffle fell before I could snap a picture, it still tasted really good.
