Italian-Style Pickled Cauliflower Recipe
This is a classic, Italian-American style of pickled cauliflower. It’s super easy to make, keeps for months and will brighten up your antipasti plate. The real name for this mix of pickled cauliflower and other vegetables is giardiniera, or garden pickles, and they are, apparently, a Southern Italian thing. Garlic dill pickles. Place in each sterilized jar..1/4 tsp each of dill and celery seed, 5 peppercorns, 2 cloves of garlic, 2 sprigs of fresh dill. Pack with cucumbers. Pour hot vinegar mixture into jars with 1/2 inch head space. Cover with sterilized lids and rings. Process in large pot simmering water for 5 minutes. Water should cover jars by 1 inch.
