So I made a bunch of beef “taco” meat 2 days ago with the intention of making chile rellenos right then. The stars didn’t line up correctly and the rellenos never got made. I had 4 poblano peppers in the fridge(a rare find here in the great state of CT- oh how I miss my Colorado roots) that were starting to get a little soft and tonight was the night to use them.
Spiced Pork Stuffed Hatch Chile - Spicy, smoky, a little sweet, a lot succulent. Incredibly delicious and super easy to make! Great way to use up hatch chiles, and if you don't have access to those, simply substitute with anaheim, poblano or even green bell peppers. This is comfort food with some amazing Mexican flavors that your whole family will love!
