Antipasto deliciousness via @queenswharfhotel My favourite way of eating!! Quite often we eat like this for dinner and lunch!!! I spend some time once a week preparing slow roasted or dehydrated vegetables for the week ahead making dips and vegan cheeses dukkah and flavoured sprinkles what ever fresh greens and veggies we have in the garden. - 2 large sweet potatoes cut into fries - 1/4 cup coconut oil - 1 bunch of fresh basil - 1 cup shredded coconut 1. Heat coconut oil in a fry pan 2. Add fries (each one should be coated) 3. Cook fries to a golden brown & then gradually add basil & coconut (optional: ADD 1 tbsp himalayan salt = sweet & salty) Time: 30 min
