Summer Fave. Fried squash. 2-3 yellow squash (zucchini works too) canola oil for frying, cracker crumbs (about 1 sleeve of saltine crackers crushed), 2 eggs,  1-2 tablespoons milk

2. Whisk the 2 eggs and the milk together.
3. Dip the squash slices in the egg mixture, then in the cracker crumbs. I usually crumb one squash at a time. One squash will usually fill my skille
