This quick version of red beans and rice gets its smoky goodness from super-lean Canadian bacon and a hit of ground chipotle pepper. It's delicious as a leftover but will thicken as it stands. To keep it properly syrupy, just thin with a little water and reheat.
red chile chicken - made 12/10/12. This has great flavor & was very easy, most of the cooking time was pretty hands off. I used chipotle chile powder. Will use regular next time, the chipotle was just too hot, even for me. I did have 1 tortilla & about 1/2 the serving fit in it, and it didn't seem too hot w/ the tortilla, so that's a good idea to do. Also I omitted the beans as I don't like them & added frozen corn. With 13oz of chicken it was 352 cal per serving, made 4 servings. -Julie
