Ingredients: 2 cups sushi rice 2 1/2 cups water 1/4 cup rice vinegar 2 tablespoons sugar 1 teaspoon salt 6 sheets of nori (seaweed) 1 cucumber, julienned 1 carrot, julienned 1 avocado, sliced 1/2 cup red bell pepper, julienned 2 tablespoons sesame seeds (optional) Soy sauce, pickled ginger, and wasabi for serving Directions: Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker or pot, then cook according to package instructions. Let cool slightly. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved (do not boil). Stir this mixture into the cooked rice. Lay a sheet of nori, shiny side down, on a bamboo sushi mat or a clean, flat surface. Spread a thin, even layer of rice over the nori, leaving about 1 inch at the top
