Red Velvet Cake - for the best results I like to separate the eggs and beat the egg whites.
30min · 1 serving Ingredients • Cake tin 18cm • 170ml buttermilk (or milk & 10ml lemon juice) • 100g soft butter • 120g caster sugar (or icing sugar) • 3 eggs - separated • 160g vegetable oil • 220g cake flour • 15g cocoa powder • 3g baking soda • 5g baking powder • 2g salt • 2g vanilla • 1/2 tsp white vinegar Red gel colouring Buttercream: • 230g unsalted butter • 100g powdered sugar • 350g cream cheese Method • Step 1: At slow speed beat the butter and sugar • until thick and becomes a light yellow almost white colour. • Step 2: Add egg yolks one at a time and beat on medium speed.
