The process of extra virgin olive oil start in the farms, where the olives are harvested directly from the tree.  Once collected the olives, they are deposited in bulk and transported in the trailer the same day to the olive-oil mill, so the time between harvest and the crushed fruit  is reduced almost to hours.

Once the olives are selected, they are placed on a conveyor belt together with the leaves, branches, wood, iron and stones. This belt takes them to the air machine. The fan air force can eliminate all foreign particles that may alter the production of the oil.
